Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>

Infuse for 1 – 3 minutes, tasting regularly.

Yorkshire is in Northern England; nevertheless, it is unclear what connection this northern region has to Earl Grey, or more particularly Charles Grey, the 2nd Earl of Grey. One hint: it’s not “he was born there.” Charles Grey originated in the northern region of Northumberland. Until 2006, the answer was essentially “Nothing,” with the possible exception that he would have passed through Yorkshire on his route to London to carry out his responsibilities as Prime Minister.
So, 161 years after his death, what transpired in 2006 to re-establish his ties to the county? A museum in Leeds, the largest city in Yorkshire, has recently acquired his old writing desk. What a dull description, right? Really, a lot of stuff happened at that desk.
One may assume he drank a lot of tea at the ornate rosewood table, which dates to 1825. A black tea infusion from China, perhaps with a hint of his favourite bergamot flavouring, would have been steeping in his cup. At this elaborate desk, he also penned and signed several laws as Prime Minister.
We’ve recreated his fantastic sake blend in homage to the man, his tea, and his efforts to enhance the world for all its inhabitants.
First began with a robust mix of high-grown, seasonal Ceylon teas from Sri Lanka rather than the more conventional Chinese tea foundation used in Earl Grey.
Finally, a fantastic Kenyan tea from the Tinderet estate was added to the mix to round out the flavours. For that recognisable citrus tang, mix in some of natural bergamot oil. The final mug is deliciously substantial and hearty, with mellow malt undertones and a bright, citrusy bergamot flavour.
