Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

You may assume that the term “passion fruit” refers to the fruit’s invigorating taste, but you’d be mistaken. Brazilian Jesuits in the 1700s gave the fruit its name. Fruit trees were abundant when the Jesuits visited the grove they discovered. During colonial times, Jesuits transported the fruit and spread the seeds in the gardens of their missions across South and North America. Actually, the Jesuits were the first to plant passion fruits in what is today a major commercial growing region in California. Passion fruit has a flavour that’s all its own. It has a somewhat tangy flavour ranging from sweet to sour, with a musky, guava-like flavour. Because of its flavour profile, it goes wonderfully with the astringency of our Ceylon tea. This is one tea that is excellent whether served hot or cold. One taste and you’ll want more and more.
