Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

At one time, the Carolinian Forest—so named in Canada—covered the whole continent. The original residents of this forest discovered ways to make a livelihood off the woodland’s bounty. The sap from the towering sugar maple tree, which towered over the entire woodland, was one of the most remarkable of these. In the spring, locals saw that animals were chewing on the tree’s limbs, and it became a symbol of the coming of warmer weather. Animals were lured to the trees by the delicious sap, so humans figured out how to harvest it by making notches in the bark. They gathered it in buckets and reduced it to a syrup by boiling it down. …Maple syrup!
European settlers learned to produce syrup from locals in the 17th century. Its sugary taste made it a mainstay in their diet almost immediately.
What can only be called the “wonder of the woods” has given Canada and New England worldwide fame.
