Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>

Blended with toasted rice for a unique flavour, this green tea is a speciality of the Japanese tradition. Because of its crisply vegetal quality, there’s a hint of green tea in the cup, which is tempered by the rice’s bready flavour. The aftertaste of this tea has an inherent sweetness and a pleasantly chewy quality. A typical side effect of the fire process is that the rice “pops,” much like popcorn does when it is popped in the microwave.
An influential samurai warlord residing in Hakone on the Izu Peninsula of Honshu Island in the 1400s is said to have been drinking tea with his patrol commanders while plotting an attack. Genamai, one of the servants, was bringing everyone hot tea when the warlord, who had secretly brought some rice to eat for breakfast, dropped his bag as he bent over to get his cup. When they fell into the steaming cup of tea, several of them burst. The warlord erupted in rage, sprang to his feet while brandishing a samurai sword, and severed Genamai’s head clean off. After standing up, he sat back down to resume the discussion. The tea was ruined, yet he drank it nonetheless. He found the flavour to be novel and satisfying.
