What do you get when you combine the unique flavour of southern Africa with the juiciness of northern Africa? Come on, then, let’s find out. We begin our journey in North Africa, more especially in Algeria, where some of the world’s best pomegranates are grown. It is well knowledge that Madagascar is the world’s leading Vanilla exporter. Then, what do we have here? Pomegranate and vanilla, two fantastic flavours on their own, create a blend that is at once airy and juicy, full of deep depth. How, therefore, did these northern and southern tastes meld in the first place? There are no historical records of the first time these two ingredients were combined, but it was almost certainly at the hands of a French chef.
The Frenchman? Of course! The French colonized both Algeria and Madagascar. As a result, they communicated often with one another. It’s quite possible that the first mixing took place the same year that France annexed Madagascar.
