Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

In Canada’s Niagara Peninsula in the month of May, the flowers of soft fruit trees explode in a riot of colour. Peach trees make up a large portion of the forest.
By July’s end, these flimsy flowers will have matured into ripe peaches whose yellow flesh is so supple that the juice drips down your chin as you eat them.
