Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

Let’s say a philosopher, a Frenchman, and an American all end up in the same café. Just what do they eat? The gelato of 17th-century Paris is the obvious choice. Gelato was created by Sicilian chef Francesco Procopio dei Coltelli, who worked in the oldest, continuously operating café in Paris, Café Procope. His clientele ranged from commoners to the social elite. Coltelli’s grandpa invented the ice machine in Italy, and Coltelli perfected it in France. This allowed to produce the delicious frozen delight. Fascinant. Gelato is now more strongly linked with Italy than France. Italy is the only country in the world where handcrafted gelato outnumbers factory-made by a large factor. Gelato has less fat than ice cream, but its intense fruity flavour comes from a combination of high sugar content and natural fruit purees.
