Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

Earl Grey was originally a combination of Chinese and Indian teas flavoured with oil extracted from the bergamot fruit (a citrus fruit related to the orange). There is a plethora of legends about the birthplace of various Earl Grey teas. One such story is; a British diplomat who, (was on assignment in China), saved the life of a native speaker of the Mandarin language. The ambassador was so appreciative that he or she was given the recipe for this delicious tea as a token of appreciation. The envoy brought the tea back to Britain and gave it to Prime Minister Earl Grey. Another version of events has the Prime Minister coming to the Mandarin’s rescue.
