INFUSION: Pale yellow / green.

Bring filtered or freshly drawn cold water to a boil (100oC/212F) and then cool to (85oC/185F). Pour 1 slightly heaping teaspoon loose tea into the teapot for every 7-9oz / 200-260ml of fluid volume. Fill the teapot halfway with hot water. Cover and steep for 3-5 minutes, to taste (the longer the steeping time the stronger the tea).
