Quantity
Use 2gr of tea per 150ml of water.
Temperature
For the optimum infusion use 85°C <185°F> water.
If you like milk, use water at 100°C <212°F>
Brew Time
Infuse for 1 – 3 minutes, tasting regularly.

Royalty, high society, and tea have all been intertwined throughout history. In 1662, for instance, when King Charles II wed Princess Catherine of Braganza of Portugal, tea’s fortunes changed in Britain. The future monarch of Britain had already been an avid tea drinker for years before her wedding.
She had a trunk of Chinese tea as her dowry. She soon began offering it to her noble court acquaintances. More and more people wanted to taste the novel drink as word of it spread.
Women preferred to drink tea in the comfort of their own homes, while males frequented the City of London’s many coffee cafes. Afternoon tea became a social norm in London as tea drinking spread and the city’s population grew. Little sandwiches and cakes were provided during these occasions. We can only speculate on the outcomes of these get-togethers if they had access to a cup of delicately flavoured strawberry Lemon tea.
